Afritadang Manok (Chicken Afritada)

Afritada is a Filipino tomato-based sauce stew, commonly made with chicken, pork, or beef. I read that the name afritada is derived from the Spanish word fritada meaning fried and refers to the first step of the process in which the meat is pan-fried before simmering in the tomato sauce.
It’s a dish that reminds me of my childhood and I just had to learn how to make it myself now that I’m an adult 😄There’s many different variations to Afritada - I’ve seen it made with hot dogs, and even liver, but this version is my favorite. I like to serve mine on a bed of piping hot white rice and sliced chilis for an extra kick of spice 😮💨 How do you like your Afritada?

Instructions
- Optional: In a large bowl (or a large ziplock would work nicely too) marinate chicken (2 lb) in lemon juice (½ lemon) and soy sauce (¼ cup) while you prepare and chop up all your veggies. 
- In a large heavy pan, heat oil (2 Tbsp) over medium-high heat. 
- Pan-fry cubed carrots and potatoes until golden brown and crispy on the edges. Remove from pan when done. 
- Next, brown chicken on each side. 
- Add in garlic (6 cloves), onions, and tomatoes and sauté for 4 minutes or until onions are soft and tomatoes are cooked down. 
- Add fish sauce (2 Tbsp), garlic salt (¼ tsp), black pepper (½ tsp) and stir. 
- Add tomato sauce (1 cup) and water. Give it a good mix. 
- Bring to a boil and then reduce heat to medium. Cover and let simmer for 20 minutes. 
- Add in the carrots and potatoes. Cover and cook for 10 minutes or until potatoes and carrots are tender. 
- Add in bell peppers and peas. Cover and cook for 3-5 minutes until bell peppers have softened. 
- Remove the cover and let simmer uncovered for 5 more minutes to thicken the sauce. 
- Season with salt and pepper.
