This is one of the first Filipino dishes I cooked for my friends. I was so nervous for them to try it but by the end of dinner the entire pot was gone, which made me so happy. Caldereta is a rich & hearty Filipino beef stew. The beef is stewed in a sauce made of liver spread & tomatoes. Liver spread is such a key ingredient! It truly gives an extra layer of depth & richness that makes it so delicious. This stew has a longer cooking time of approx. 2 hours, but I promise you, it’s worth the wait.

Heat olive oil (2 Tbsp) in a large pot over medium-high heat. Add the garlic (4)and onion (1), allowing the onions to sweat and become translucent.
Add the beef (2 ½ lb), mixing well, and cook until browned.
Once browned, stir in the bay leaves (3), black pepper (1–2 tsp), bouillon (1), and liver spread (⅓ cup). Mix thoroughly to combine.
Pour in the beef broth (3 cups), tomato sauce (1 8-oz can), tomato paste (3 oz), and water (1 cup). Stir and simmer until the beef is soft and tender, approximately 1-2 hours, depending on your pot.
Once the meat is tender, add the carrots (2 cups) and potatoes (2 cups). Cover and cook for 7-10 minutes, or until the vegetables are soft; they should be easily pierced with a fork.
Stir in the chili flakes (1–2 tsp), red bell pepper (1), green bell pepper (1), and olives (¼ cup). Mix well to combine all ingredients, cover again, and simmer on low heat for about 10 minutes. Season with salt and pepper to taste. Serve hot with white rice.
