Filipino spaghetti is one of those dishes I will always love, but when I was diagnosed with gestational diabetes during my pregnancy, I had to rethink how I made it. Refusing to take it off the menu entirely, I set out to recreate the classic recipe using smarter, nutrient dense swaps that kept my blood sugar steady.
That experience inspired my series on healthier adaptations of classic dishes like this recipe. By swapping in ground chicken, tossing in extra veggies like carrots and mushrooms, sweetening with monkfruit, and using pre-cooked pasta to boost resistant starch, this version delivers all the sweet and savory flavor you expect from Filipino spaghetti just with a high-protein, gut-friendly upgrade.
Heat the olive oil (1 Tbsp) in a large skillet or deep pan over medium-high heat until hot.
Add the chopped onion (½) and minced garlic (4 cloves). Sauté for 1–2 minutes until fragrant, then add the ground chicken (1 lb). Cook, breaking it up with a spoon, until fully browned, approximately 6-10 minutes.
Add the sliced turkey hot dogs (3) to the pan and sauté for a couple of minutes until warm and lightly browned.
Stir in the grated carrots (2) and sliced mushrooms (1 cup). Sauté until the vegetables soften slightly.
Pour in the tomato sauce (24 oz) and season with salt and pepper to taste. Stir well, bring to a gentle bubble, lower the heat, cover and simmer for 15 minutes until the sauce thickens and the flavors meld.
Stir in the monkfruit sweetener (3 packets). Turn off the heat completely and gently fold in the plain Greek yogurt (¼ cup) until creamy and smooth.
Serve hot over pre-cooked spaghetti (4 cups), topped with low-fat shredded cheese if desired.
Pro Tip: Freezing and reheating cooked pasta boosts its resistant starch, which helps prevent blood sugar spikes and supports gut health. To keep the pasta tender, reheat it gently with a splash of water or sauce in a covered pan over low heat until warmed through.
