Instructions
In a large pot, heat oil (1 Tbsp) over medium-high heat. Add chicken thighs (3–4) and cook until browned.
Add garlic (6 cloves), ginger (2–3 Tbsp), and onions (½). Sauté until onions are soft, about 3 minutes.
Stir in uncooked rinsed rice (1 cup) and stir for 1 minute.
Pour in broth (2 cups) and water (4 cups). Bring to a boil, skimming off any foam that forms.
Once boiling, reduce heat to medium. Cover and simmer, stirring occasionally, until the porridge reaches your desired consistency (about 25-30 minutes).
If using saffron (1 Tbsp) or annatto powder, lower the heat and stir it into the porridge for extra color and aroma. Season with fish sauce ( to taste).
Top with your favorite topping and serve warm.
