This Effortless Citrus Miso Chuck Roast is the weeknight dinner you didn't know you needed. The beef is braised in a rich, savory sweet marinade made with fresh citrus, miso, ginger, and garlic. It's packed with bold flavor and takes less than 10 minutes to throw together. Perfect for busy moms, this is a true "set it and forget it meal." I literally made it, threw it in the oven, took a nap with my son and enjoyed it later for dinner. The nice thing is that the oven does all the work for 3 hours so you take care of everything else!! Pair it with your favorite veggies and a big bowl of rice for a dinner the whole family.

Preheat oven to 325 °F.
Whisk together marinade ingredients in a separate bowl until the miso (3 Tbsp) is completely smooth and incorporated.
Pat the chuck roast (2 ½ lb) dry with paper towels. Set it in a Dutch oven or heavy-bottomed pot with a tight-fitting lid.
Pour the marinade over the meat, turning it a couple of times so every side is well coated. Cover.
Cover and bake for 3 hours.
Should be able to shred easily. If not, cover and cook for 20 more minutes. Shred directly in the pot with 2 forks and toss the meat through the juices until everything is combined. Serve over rice, garnish with scallions and sesame seeds.
