If you need more veggies in your meals, then this is for you. This is a real, easy and comforting Filipino meal I make my family at home and chayote squash is the star of this dish. I love that it’s vegetable forward and my toddler is obsessed with it. it’s called ginisang chayote which means stir fried chayote. You start out by sauteing onions, garlic, tomatoes, and pork belly, then season it with oyster sauce and fish sauce. At the end you’ll add in the chayote squash with a little bit of water and simmer until fully cooked.
Feel free to replace the pork belly with any protein of choice, ground meat works exceptionally well in this recipe :)

Instructions
Add 1 tsp of oil (1 tsp) to a hot wok or pan. Next, add in garlic (2 cloves) and sauté until aromatic then add in pork (½ lb).
Brown pork (½ lb) so there is no longer any pink, add a pinch of salt (1 pinch) and black pepper (1 pinch), then add in tomato (1) and chayote (1).
If using, add oyster sauce (1 Tbsp) and fish sauce (½–1 Tbsp). Then add in chicken broth (⅓ cup).
Cover and cook on medium heat for 5-10 minutes or until chayote (1) is soft.
Serve over rice.
