The 15-minute dinner hack you’ve all been asking for Lazy Rotisserie Chicken Sisig 🍗

If you’ve never had Sisig, it’s a Filipino staple and honestly, one of my favorites. The traditional version is made with pig’s head (think cheeks, ears, and snout) that's boiled then grilled. A more modern version is made with lechon kawali, or crispy pork belly. Both take lots of time and effort to prepare. Using a store-bought rotisserie chicken is the ultimate hack for a busy weeknight. It gives you all that flavor with minimal effort.

Mom hack: I always set aside Micah’s portion before adding the chilies. It makes this dish adaptable for the entire family.

P.S. Feel free to add mayonnaise and/or an egg for a creamier sisig.

Instructions

  1. Heat the butter (3 Tbsp) in a large skillet over medium-high heat.

  2. Add half of the red onions (1 whole) and sauté for 2 minutes.

  3. Add the garlic (2 cloves) and cook for 1 minute until fragrant.

  4. Add the chopped chicken (1 whole) to the skillet.

  5. Spread into an even layer and cook undisturbed for 1-2 minutes to allow the edges to slightly brown and crisp, then toss and cook until heated through.

  6. Turn off the heat. Stir in the remaining red onions (1 whole), Knorr liquid seasoning (2 Tbsp), and citrus juice (2 whole).

  7. Add the chili peppers (to taste) and half of the scallions (3 stalks). Toss until well combined.

  8. Season with salt and pepper (to taste) to taste.

  9. Garnish with the remaining scallions (3 stalks) and serve with extra citrus wedges on the side.
